Granola

Big Batch Recipe

6 C rolled oats
1C chopped nuts ( I used walnuts, you can use what you like)
...
1C wheat germ (if you like)
1/2 tsp cinnamon
1/4 tsp salt
3/4 C honey (or honey mixed w/maple syrup)
1/3 C oil (any kind)
1 tsp vanilla
1 C dried fruit, optional
1 C coconut, optional

Preheat the over to 300' degrees. Combine the first 5 ingredients. Warm the honey, add the oil and vanilla. Drizzle the honey-oil over the dry ingredients and toss to coat. Spread the mixture onto 2 cookie sheets. Bake about 30 minutes until golden, stirring every 10 minutes.
When done, remove from oven and stir in dried fruit or coconut if used.  As the granola cools, it will lose its stickiness and become very crunchy. Makes about 9 cups.


I prefer mine with coconut, cranberries and flax seeds instead of wheat germ.  Its an easy recipe and can be changed to your liking, very easily.
